Honduras: The Beginning

I am currently drinking water from a fresh coconut that was picked fresh from the tree. Every experience has been incredible so far. Our first full day on the island was a success. Katie and I went snorkeling twice today, and both were very full of new photo opportunities. There were some very friendly angelfish that were swimming alongside us. We also saw our first sea cucumber!!

In addition to the amazing snorkeling we have been doing, the land experiences have exceeded my expectations. The other people on the island, including Roberto are wonderful. Our food has been so so delicious. I think a highlight for everyone was the baleadas we ate last night. Baleadas are flour tortillas with refried beans, scrambled eggs and queso fresco. We also added some crema (sour cream) and hot sauce. All our food is cooked on a wood fired stove.

So far, though it has been very hot, a near constant breeze is keeping the bugs away. Crossing our un-bitten fingers that the breeze stays. Looking forward to continuing talking to the locals, exploring the island and seeing some rays. Unfortunately I am unable to post pictures at this moment, but I will shortly!
